What wood would you burn at your Texas BBQ joint?

In our planning of our make-believe Texas BBQ joints, I've asked about location, name, slogan, and style of cooking. Now, assuming you're cooking one way or another with wood, what wood will you burn to cook and flavor your meats?

Don't know really anything about wood but I'd go with apple because it sounds interesting.

Almost any "nut" wood will work....but I'd prefer Hickory or oak or a combination of the two.

Pecan for poultry, cherry for meats, alder for fish.

I totally agree with the previous!
From all i've tried so far this is the set up I approve and agree with.
