Top 3 BBQ joints in DFW?

I always enjoy reading or hearing what others think of this BBQ place or that BBQ place, what joints one feels are tops in a town. To that end, I'm curious what y'all think are the top 3 BBQ joints in the DFW area. Obviously, I could separate the D from the FW, and I could ask for more than 3, but I thought I would put you to the test a tad more. So, in the DFW metropolitan area, what are your top 3 BBQ joints?

Last night, I paid my first visit to Bone Daddy's House of Smoke. The Austin location is 1 of 5 in the state. The other 4 are in the DFW area. On my plates: quarter chicken, pulled pork, mashed potatoes, side salad, & roll. (Attn, sauce haters: Sauce was already on the pork and turkey, when it arrived.)

What's your best BBQ find?

It's happened to all of us. Driving down the road, and you pass a BBQ joint you've never heard of. Likely nondescript or run-down looking, you bust a U-turn and stop in for a meal. Lo and behold, it's awesome. (Granted, this scenario often ends with regret that you stopped in, b/c the meal was less than awesome.) For me, it was Mills County BBQ Company (RIP) in tiny Goldthwaite, TX; and, yes, there was a U-turn involved. I love these "finds." Places you've never seen, never even heard of. Places where hype or buzz or reputation weren't the reason you stopped in. What was yours? What's the best BBQ joint that, when you stopped in, you'd never heard of?
