Best Texas BBQ meat outside of the Texas Trinity?
Back in December, I asked for your favorite Texas Trinity (brisket, sausage, pork ribs). Today, I want to know your single favorite meat item in Texas that is NOT in the Texas Trinity. And not just generally speaking. Don't just say, "Turkey." Tell me the item and the BBQ joint. I figure beef ribs will be the most common response, but I'm interested nonetheless.

The pork chop at Cooper's in Llano (if that is different that a pork rib - I think so).
