Texas native's new joint brings some 'good barbecue up here' (Sharon Thompson, Lexington Herald-Leader, December 2, 2010)
Years ago, Scott Ahlschwede was watching election returns and noted that the states colored in red were "where all the good barbecue comes from," he said. Ahlschwede, who grew up in west Texas and is a veterinarian with Rood and Riddle Equine Hospital, said the area needed some "good barbecue up here," so in November he opened Red State Barbecue at 4020 Georgetown Road. "It feels like an old- fashioned barbecue joint, which it should be," he said. The menu includes brisket, ribs, chicken, pulled pork, slaw, potato salad, baked beans, corn pudding, and macaroni and cheese. "We cook everything on site," he said. Sauces are Memphis sweet, Texas spicy and Carolina mustard. Hours are 11 a.m. to 9 p.m. Monday through Saturday, and 11 a.m. to 6 p.m. Sunday. Call (859) 233-7898 or go to RedStateBBQ.com.
