BBQ changes in Austin
Mike Sutter has a great piece about a couple of recent moves in the world of BBQ pitmasters. Bill Dumas, the pitmaster at Smokey Denmark BBQ, will leave Smoke Denmark on October 30 and join the team at Stiles Switch on November 1. Kennan Goldis, formerly of Goldis Sausage Co. and currently working under Bill at Smokey Denmark, will take Bill's place. Read all about it.

Lunch at Smokey Denmark's Smoked Meats (Austin, TX)
Met my buddy Matt Alexander last week for lunch at Smokey Denmark's Smoked Meats. I ordered a chopped-beef baked potato with a link of 90/10 (beef/pork) sausage. Matt had a Double Oinker sandwich with green chili pepper macaroni & cheese with bacon. Hung out at our table with pitmaster Bill Dumas after eating. More pics to come.

The rest from Smokey Denmark's at Twisted X
Rest of the pics from Smokey Denmark's BBQ, which was parked at Twisted X Brewing Co. when I took a Texas Q Tours tour there. Pitmaster Bill Dumas was really generous with his time & toys. He let me add some wood to the fire in the smoker, and he let me play with some old knives (That's never a good idea!).

Smokey Denmark's BBQ at Twisted X Brewing Co.
Our Texas Q Tours group were happy to discover Smokey Denmark BBQ during our January stop at Twisted X Brewing Co. The Austin BBQ truck had set up shop at the brewery that day, as it does on many weekends. Beef short ribs were at the top of the money, so beef short ribs it was!

First vist to Smokey Demark's BBQ (Austin, TX)
A few weeks ago, I had a lunch scheduled at Smokey Denmark's BBQ, a food trailer at 3505 E. 5th St. Due to the rain, the lunch was rescheduled, but I stopped in anyway to check it out for the first time. Spent time chatting with pit master Bill Dumas, who loves his job so much. He was kind enough to show me the trailer and smoker. I ate a pork rib on the spot and took some food to go, namely the Double Oinker: a sandwich with pulled pork, sausage, & slaw. Here are some pics. More to come.
