The United States of Barbecue

July 4, as we all know, is not a bad day to form a country. So, let's do it. Let's ordain & establish The United States of Barbecue! I need to know two things: (1) Which of the 50 U.S. states make the cut for this new smoked-meat nation (Pick as few or as many states as you feel deserve it.)? (2) Which city will be the new nation's capital (No ties, people!)?
