What meats would you serve at your Texas BBQ joint?
So, if you were to open up a Texas BBQ joint, what meats/proteins would make it onto your menu? Would you stick with the basics like brisket, chopped beef, sausage, & pork ribs? Gotta have the basics: Brisket, Pork ribs (Luis and Babys), smoked chicken and chopped beef. But what EVRYONE here misses are lip-on BEEF RIBS. They are hard to do, but they are the best. I might also throw in a smoked prime rib and chili.
Has to have Smoked Brisket, chopped beef, and ribs. Not meat, but I think BBQ joints should always have banana pudding...it's just a nice ending...good baked beans, (sometimes that's even hard to find), and BBQ baked potatoes. I'll pick up chopped beef from Rudy's and bring it home to put on a baked potato since they don't sell them there. That's a missing menu item right there!
The basics are a must but local bbq favorites need a spot on the menu... with a selection of seasonal game...

Surprised more people are not mentioning sausage. I would have it in different varieties. some people need a regular style, I like jalapeno cheese.
