Chris' lunch at City Meat Market in Giddings


We haven't made a trip to City Meat Market in Giddings, although we planned to hit it up after Snow's once. Didn't happen. We'll have to make our first official visit there sometime this year. Chris, however, stopped in for lunch on Thursday and sent me these pics. I emailed him back and asked if the sausage was dry/overcooked (b/c it appears a little too done). Here's his response:

Yeah it was definitely overcooked and dry. With sauce it was pretty good though. The sauce is thinner than most sauces I'm used to, but it had really good flavor and plenty of sweetness. I got there around 3 p.m. and it was all they had. I asked them if that was the norm, and they said by 2 or so they're typically out of everything but sausage. I think their hours are 11-5 on M-F and a little longer on Saturdays.

Apparently they regularly have brisket, ribs, sausage, chicken and pork butt. They'll also do steaks and pork chops if they're kind of low on other stuff or if someone calls and requests them. I talked to Gerald Birkelbach, the owner, and grabbed some of their cards too. He said you can call ahead and order whatever, and they'll do it.

It's in a really cool location in the middle of Giddings right at the corner of 290 and 77. Good atmosphere inside. Looked promising, and I'm pretty curious to see how they do with their other meats.

OK you guys. You obviously don;t understand that City Meat Market's sausage is different, in that it is NOT pork sausage.

It's beef sausage! And one of the greatest things I've ever come across! Yuuuum!

If you bite into it expecting pork sausage, it's going to taste a little weird. But knowing it's BEEF, well then... it's GREAT!!!

Love that place. Can't wait to have an excuse to travel from Austin to Houston again soon!

Agreed! The sausage is delicious! Just don't bite into it expecting pork.

It's my favorite sausage around Texas. None even come close. Dip it in their sauce, or even plain, and you'll be drooling in no time!

Now I feel the need again... need to go back out there and order a nice mix of brisket, sausage, beans, and condiments. Truly one of the BEST BBQ places around.
