How will you heat your meat?

Step 4 in Build Your Own Texas BBQ Joint: What will you cook with? Wood? Charcoal? Gas/electric cooker? Old-fashioned pit over hot coals? Classic wood-fired smoker? How you gonna cook your meats? (Feel free to give different answers, depending on the protein.)

Old fashioned wood burning pit. Both steel and one brick pit.
