Where would you open a Texas BBQ joint?
It might flop, but I'm announcing a new feature on the blog: Build Your Own Texas BBQ Joint!!! It's simple, really. The professionals have actual BBQ joints/operations. We patrons exist in fantasy land and talk about how we'd do things if we had our own place. Well, fellow fantasizers, this feature's for you. Each installment will ask for your plan/idea for a certain aspect of your BBQ joint. Let's start simple: Where would you locate it?

It needs to be set apart from everywhere else. Salt Lick has the right idea but is a little too far. Actually, Franklin's trailer is what I have in mind. People will only go specifically for the BBQ joint, and not just because they were passing by. Away from any highly-populated areas, so not near a college campus or busy downtown area.
The idea is that the food will bring the people, and not rely on a convenient location (again, like Franklin and the Salt Lick). I think somewhere in Southeast Austin would be the right amount of proximity plus obscurity.

When you say Southeast Austin, are you thinking airport area or more like Creedmoor?
Actually, that's what we are looking at also, 2 locations, one in a high traffic area and one out of the way spot....on the east side, east on 1st street.
Thoughts?
Cedar Park or something NW. Smokey Mo's dominates the area now so there is plenty of opportunity.
