Jalapeno poppers!!!

Yesterday, I ran into some jalapeno poppers. Though not what I think about when I think "Texas BBQ," they are very popular here in The Lone Star State, they involve bacon (meat), & can be prepared via smoking, so not that off topic for us. There are many variations, to be sure, but the standard setup is cream cheese inside a jalapeno pepper, wrapped in bacon, and then cooked (via smoking or grilling, most likely...I guess you can do 'em stove top in a skillet).

Anyway, for those of you who are into these, I'm curious how you cook them and what, if any, name you have for them. Do you smoke them? Grill them? Are they "jalapeno poppers," or do you have a special name for them? Also, if you send me a picture of some that you made/make, I'll post them for our Backyard BBQ feature.

I cut the stem end off of mine and "waller" out the inside with a jalapeno cleaning tool i found. Then I mix up goat cheese and shredded Chihuahua cheese with some chopped green onion, garlic, salt and pepper and fill the pepper with it. Wrap them in one slice of par-cooked bacon and put them in the smoker (or the oven) standing up until the peppers are cooked.

I love those things. Not as much as Kreuz sausage, Franklin brisket, or North Main ribs, but they will do. We usually stuff ours with sharp cheddar mixed with chopped onions. We have smoked them, grilled them, but usually just bake them in the oven for about 40 minutes. I want to try stuffing them with cheese and brisket.

Amazon sells nice cheap racks to cook them on standing up. Keeps the good stuff inside. You can spend big bucks on fancy racks, but I think ours was about $15. Also the pepper coring knives which are very handy. Still you MUST wear gloves, or suffer the consequences.

I have a friend that calls his Armadillo eggs. We just call ours stuffed jalapenos.

Oh, btw, I meant to mention that Hard Eight BBQ has those as a regular item they call "brush poppers". They wrap theirs around grilled chicken and onion, wrap with bacon, and grill them. Good stuff.

Twitter reply: "grasshoppers! I add a piece of white meat chicken on top of cream cheese them wrap. Grill or smoker. Grill is best. I also season the chicken with a dash of salt and lemon pepper. Make up 200 every year for annual. BBQ. Gone in 60 secs"
