QOTD: How important is the smoke ring?

Yesterday, I wrote that the slice of brisket I had this past weekend at Ronnie's BBQ (Johnson City, TX) was one of the top 5 pieces of brisket I've had. A friend of ours on Facebook commented on the lack of a smoke ring on the brisket. I replied that the ring was faint, at best, but that it didn't matter to me, b/c the flavor and texture were spot on. I've had plenty of slices of brisket with beautiful smoke rings that tasted terrible. If it's dry and chewy, does it matter that it has a sizable smoke ring? So, this begs the question: How important is the smoke ring on a brisket?

It's not.

I have made briskets that were phenomenal and just depending on the pit and process, some have had aggressive smoke rings, others have not.

It's something I will notice, but not use in determining if the brisket is good. Usually taste and texture do that.

The Smoke ring as mentioned is more of the process. In fact, it is not even a factor to be considered in KCBS judging.

And it can be chemically added as well, see - Tender Quick.

I've cooked some that had large all the way around and I've cooked some with a very faint ring. Taste and Tenderness are what your looking for.

While a good smoke ring is usually a sign that the meat has been cooked low and slow under enough smoke, the absence of one is not necessarily the sign of poorly smoked meat.

For me just eating for enjoyment smoke ring means little. When I am practicing for competition or competing then it does matter. It is something judges look for, whether or not it matters in the real world in the screwed up microcosm of judging it does. An ideal piece will look as good as it tastes...but not every slice of brisket is going to be a 10 in appearance or flavor. It's like finding a hot girl with brains...rare that it all comes together in one perfect package, but it is possible and that is what we strive for lol.
